Scottishindexes is an archive-research service but is also a whole lot more. A family-run business they index archival material covering prisons, crime, hospital, poor relief and paternity - and more - which they provide for free. They also have research guides catering from the beginner to the very advanced. Have you used The Statistical Accounts of Scotland? They are essentially a snapshot of social history in your family's parish in Scotland in the 1790s and the 1840s. What have you found in these resources?
